Today, I delved into Cava, Spanish wines that really are diverse and the fact that they had bubbles was an added benefit. D.O. Cava hosted us at Manhatta which is 60 floors up. We tried 9 wines and then went into an adjoining room to see how they paired with various foods. Learning about the terroir, tasting notes, and more was a great way to immerse myself into this category of wines.
